Sacred Heart of Jesus Cherry Swirl Coffee Cake

I have great news! You are loved! Loved by the God of the universe! The God who called you into being, because He wants you! Yes. He wanted you to exist because He has a plan and a purpose for you life, but most of all, He wants you to know that you are precious to Him, the apple of His Eye, He cares about you and He loves you, right where you are now, more than you can fathom!

The Feast of the Sacred Heart falls on this Friday, June 12th. This feast is a moveable feast and comes 19 days after Pentecost Sunday.

The Sacred Heart of Jesus is a devotion and reminder of God’s love for you. Jesus makes promises to everyone who displays an image of His Sacred Heart.

The Twelve Promises of the Sacred Heart given to St. Margaret Mary Alacoque:

  • “I will give them all the graces necessary for their state in life.

  • I will establish peace in their families.

  • I will bless every house in which the picture of my Heart shall be exposed and honored.

  • I will console them in all their troubles.

  • They shall find in my Heart an assured refuge during life and especially at the hour of death.

  • I will shed abundant blessings on all their undertakings.

  • Sinners shall find in my Heart a fountain and boundless ocean of mercy.

  • Tepid souls shall become fervent.

  • Fervent souls shall rise speedily to great perfection.

  • I will give to priests the power to touch the hardest hearts.

  • Those who propagate this devotion shall have their names written in my Heart never to be blotted out.

  • The all-powerful love of My Heart will grant to all those who shall receive Communion on the First Friday of nine consecutive months the grace of final penitence; they shall not die under my displeasure, nor without receiving their sacraments; my divine Heart shall be their safe refuge in that last hour.”

Sacred Heart of Jesus Cherry Swirl Coffee Cake

This cherry coffee cake is named in honor of the Sacred Heart of Jesus, because the red color of the cherries reminds us of love, the immense unconditional love that Jesus has for each one of us. Coffee cake is traditionally served in the morning, as we start our day. Jesus wants us to start our day with Him. Start your family’s day with the love of the Sacred Heart of Jesus. It is the best “start” you will ever give them!

350 Degree Oven Lightly butter a 9x13 inch baking dish

1 c. Butter, softened

1 ½ c. Pure Cane Sugar

1 t. Real Almond Extract

1 t. Pure Vanilla

4 eggs, room temperature

3 c. Non GMO Flour

1 ½ t. Aluminum Free Baking Powder

1 Recipe Homemade Cherry Pie Filling (follows)

Homemade Cherry Pie Filling:

1 (20 oz.) bag Frozen Tart Red Cherries

¾ c. Pure Cane Sugar

¼ c. Non GMO Flour

A few drops of red food coloring, optional

Glaze:

1 c. Organic Powdered Sugar, sifted

2-3 T. Vitamin D Milk

1/8 t. Almond Extract

1/8 t. Vanilla

First make the cherry pie filling. Put the cherries in a large saucepan over medium heat. Put the lid on and stir every minute or so over an 8-10 minute period while the cherries defrost and release their juice. Do not forget to stir often!

In a separate bowl whisk to combine the sugar and the flour. Pour this into the hot cherries and stir to combine. Bring to a low boil and reduce heat to low, stirring continually until the pie filling has thickened 1-2 minutes. Remove from heat and allow to cool while you make the batter. *You may add food coloring now if you are using it.

In a large bowl, cream the butter. Add the sugar and beat until fluffy. Add the almond extract, vanilla and eggs, beating until combined. Mix on high for 3 minutes.

In a separate bowl, whisk to combine the flour and baking powder. Fold this mixture into the wet mixture, beginning with folding in a third of the flour. Fold in the rest of the flour.

Spread 2/3 of the batter evenly into the buttered baking dish. Spread all the pie filling over this evenly. Drop the remaining batter by tablespoons on top of the cherry filling. Bake for 40-43 minutes. *Do not over bake this, as it is a very light coffee cake. Test the center for doneness if the top is light golden.

Make the glaze and drizzle it on the warm coffee cake. Cut in squares to serve.
