The true story of St. George is very inspiring and teaches much that often goes untaught! Make this salad and reflect and talk about St. George as you learn about the Church Militant, the Church Suffering and the Church Triumphant!
“George was a soldier in the Roman army, under Emperor Diocletian. The Emperor liked George and made him a general over 5,000 men. Some speculate that Diocletian made George a military tribune and that he fought in a campaign against Persia. …When Emperor Diocletian required that all soldiers publically worship Roman gods, George left the army in 298. In the year 303, Diocletian outlawed Christian gatherings and ordered the destruction of churches and the Holy Scriptures. This was publicized as the Decree Against Churches in Nicomedia. When George saw the edict that had been posted, he seized it and tore it into shreds. George was arrested, brutally treated and martyred for the Catholic Faith in the year 303.
St. George is often depicted slaying a dragon, which is the symbol of evil. The legend that surrounded him was that St. George was a model knight and a defender and protector of women.
St. George is an example of a Catholic who was a member of the Church Militant because he was a “Soldier for Christ,” who now is a member of the Church Triumphant! Due to his martyrdom, he was able to bypass the Church Suffering. We are all called to combat evil, the same way that St. George is depicted combating the dragon. Edmund Burke (1729-1797) was an Irish Protestant, who fought for Catholic emancipation who said, “The only thing necessary for the triumph of evil is for good men to do nothing.” St. George could have walked past the edict that had been posted against Christians. He knew the risk he took when he tore it down. St. George was a great soldier and a great man, and is a great Saint! This salad is named for St. George because he slew the dragon!
Church Militant – The Church on earth, still struggling with sin and temptation, and therefore engaged in warfare with the world, the flesh and the devil.
Church Suffering – The Church of all the faithful departed who are saved but are still being purified in purgatorial sufferings.
Church Triumphant – The Church of all those in heavenly glory who have triumphed over their evil inclinations, the seductions of the world and the temptations of the evil spirits.”

St. George Oriental Slew Slaw
Note: If you are gluten intolerant, the soy sauce contains wheat, so make a dressing of ¼ organic rice vinegar, ¾ c. light olive oil & ½ t. sea salt to enjoy this salad :) You could add sugar to taste if you want it sweeter.
To start - Let’s mix up the dressing that has some Chinese flair!
First the pour the pure cane sugar into a small mixing bowl.
Then the light olive oil.
Now add beef broth. *This brand is gluten free and but may contain trace soy. It does not bother my children who are highly allergic to soy.
Then the organic rice vinegar. No GMO rice or GMO corn in this vinegar!
Then add the soy sauce.
(Soy sauce does contain wheat if you are gluten intolerant. Trader Joe’s soy sauce is made from Non-GMO fermented soy & Non-GMO wheat.)
Then the sea salt.
Now the Chinese 5 Spice Powder
Now the garlic powder (no garlic oil powder!)
And now the onion powder.
Whisk it all together. You may refrigerate it at this point. *If using right away, whisk well before pouring.
Now for the salad! *You could do the same following combination in a smaller bowl if you are not serving a lot of people.
Chop the green onions.
Put the coleslaw in a large salad bowl.
Now add your chopped green onions.
Now your cup of shredded carrots. This is looking so pretty!
I sauteed my sugar snap peas until tender crisp in a small amount of organic butter over high heat – it only takes about 1-2 minutes! Then remove them to a cutting board and cut off the sharp end and pull out the side string.

Add your beautiful shiny sugar snap peas to the salad – these are optional, but make for such a nice crunch!
You may assemble your salad up until this point and wait to put the dressing on. I let mine sit on the counter for 30 minutes (it was not a hot day or you would need to refrigerate.) Do not put the dressing on the salad until just before you are ready to serve it!
When you are ready to serve – Whisk the dressing again and pour it over the salad.
Sprinkle the dry roasted almonds on top.
And now for the final tasty, crunchy, touch – sprinkle the sunflower kernels on top and toss it all together!

2 ( 10 oz.) Non-GMO or Organic Coleslaw
2 bunches Non-GMO or Organic Green Onions, chopped
1 c. shredded Non-GMO Carrots, optional
2 c. Non-GMO Sugar Snap Peas *stir fried, optional
1 c. Sliced Almonds, toasted
1 c. Salted Sunflower Kernels
½ c. Pure Cane Sugar
½ c. Light Olive Oil
1/3 c. Organic Beef Broth (soy free)
1/3 c. Organic Rice Vinegar
2 T. Soy Sauce (a Non-GMO brand such as Trader Joe’s)
½ t. Sea Salt
¼ t. Chinese 5 Spice Powder
¼ t. Garlic Powder
¼ t. Onion Powder
