Father Serra Strawberry Salad

Feast Day: July 1st

Serves 12

This salad is really colorful and good! Try to make the dressing a few hours in advance. Children love the tangy sweetness. Perfect for Independence Day July 4th!

Dressing:

1 c. vegetable oil

3/4 c. sugar

1/2 c. red wine vinegar

2 cloves garlic, pressed

1/2 t. salt

1/4 t. pepper

1/2 t. paprika

Salad:

1 head Romaine lettuce

1 head Boston lettuce (optional, or use another head of Romaine)

1 pint strawberries, washed and sliced

1 c. shredded Monterey Jack cheese

1/2 c. chopped pecans, toasted

In a large jar, combine the first 7 ingredients. Cover tightly and shake until mixture is thoroughly combined. You may refrigerate this for up to one week.

Wash and dry the lettuce, tearing into bite size pieces. Combine torn lettuce, strawberries and shredded cheese in a large salad bowl. Toss gently.

Just before serving, shake the dressing and pour the desired amount on the salad and add the toasted pecans. Serves 12 people.
